Duck Confit Empanada

Preparation and Assembly

    Prepare the Duck Confit

    In a large bowl, season the duck legs with salt, black pepper, minced garlic, and thyme. Cover and marinate for at least 12 hours in the refrigerator.

    Cook the Duck

    Preheat your oven to 300°F (150°C). Place the marinated duck legs in a baking dish and cover with duck fat. Bake for 2-3 hours until the meat is tender and falling off the bone. Allow to cool, then shred the meat.

    Make the Empanadas

    Preheat your oven to 375°F (190°C). Take empanada dough and fill each round with a spoonful of shredded duck confit. Fold over and seal the edges with a fork. Brush with egg wash.

    Bake the Empanadas

    Place the empanadas on a baking sheet and bake for 20-25 minutes, or until golden brown.

    Prepare the Salad

    In a bowl, mix arugula and mixed herbs. Drizzle with olive oil and season with salt and pepper to taste.

    Serve

    Serve the empanadas hot with a side of arugula and herb salad and S.L Farms cheese crisps. Drizzle chimichurri sauce over the salad.
