Method

Preparation

  1. 1

    Preheat the Oven

Preheat your oven to 325°F (160°C).

  2. 2

    Prepare the Cheesecake Filling

In a mixing bowl, blend the cream cheese until smooth. Add the pumpkin puree, sugar, vanilla extract, eggs, and pumpkin pie spice, mixing until fully combined.

  3. 3

    Bake the Cheesecake

Pour the cheesecake batter into a greased 9-inch springform pan. Bake in the preheated oven for 60-70 minutes, or until the center is set but slightly jiggly.

  4. 4

    Cool the Cheesecake

Once baked, turn off the oven and leave the cheesecake inside for 1 hour. Then, remove it and cool it on a wire rack before refrigerating for at least 4 hours or overnight.

  5. 5

    Prepare the Crème Brulee Topping

Whip the heavy cream until soft peaks form. Spread it evenly over the cooled cheesecake.

  6. 6

    Caramelize the Sugar

Sprinkle a thin layer of sugar over the whipped cream and use a kitchen torch to caramelize the sugar until golden brown.
