Fried Calamari

Prepare the Calamari
Rinse the calamari rings under cold water and pat them dry with paper towels. Set aside.

Mix Dry Ingredients
In a mixing bowl, combine the all-purpose flour, cornstarch, grated parmesan cheese, salt, black pepper, and cayenne pepper. Whisk together until well combined.

Dredge the Calamari
Coat the calamari rings in the flour mixture, ensuring each ring is fully covered. Shake off any excess flour.

Heat the Oil
In a deep skillet or fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the Calamari
Carefully add the coated calamari rings to the hot oil in batches. Fry for 2-3 minutes or until golden brown and crispy. Remove with a slotted spoon and place on paper towels to drain excess oil.

Drizzle with Truffle Oil
Once all calamari is fried, drizzle with truffle oil and sprinkle crispy capers on top.
