Prepare the Filling
In a large bowl, combine the shredded chicken, cabbage, carrots, green onions, garlic, soy sauce, and sesame oil. Mix well until all ingredients are combined.

Assemble the Spring Rolls
Lay a spring roll wrapper on a clean surface, with a corner facing you. Place about 2 tablespoons of the filling near the bottom corner. Fold the bottom over the filling, fold in the sides, and roll tightly to seal. Use a little beaten egg to seal the edge.

Heat the Oil
In a large frying pan or deep fryer, heat oil over medium-high heat until hot.

Fry the Spring Rolls
Carefully place the spring rolls in the hot oil, frying in batches if necessary. Cook until golden brown and crispy, about 3-4 minutes per side. Remove and drain on paper towels.

Serve
Serve the crispy spring rolls with pineapple sweet & sour sauce on the side for dipping.
