Prepare the Calamari
In a large bowl, combine flour, cornstarch, salt, black pepper, and cayenne pepper. Mix well.

Soak in Buttermilk
Place the calamari rings in a separate bowl and pour the buttermilk over them. Let it soak for about 30 minutes.

Dredge the Calamari
Remove the calamari from the buttermilk and dredge them in the flour mixture until fully coated.

Heat the Oil
In a deep skillet or fryer, heat vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the Calamari
Carefully add the coated calamari rings to the hot oil in batches, frying for about 2-3 minutes or until golden brown and crispy. Remove and drain on paper towels.
