Prepare the Cake
Preheat your oven to 180°C (350°F). Grease and line a round cake pan with parchment paper.

Melt Chocolate and Butter
In a heatproof bowl, combine dark chocolate and unsalted butter. Melt over a double boiler or in the microwave, stirring until smooth.

Mix Sugar and Eggs
In a separate bowl, whisk together granulated sugar and eggs until pale and fluffy.

Combine Mixtures
Fold the melted chocolate mixture into the egg mixture gently. Sift in the flour and salt, and fold until just combined.

Bake the Cake
Pour the batter into the prepared cake pan and bake for 25-30 minutes, or until a toothpick comes out clean. Allow to cool completely.

Make the Salted Caramel Mousse
In a bowl, whip heavy cream, powdered sugar, and vanilla extract until soft peaks form. Gently fold in caramel sauce and sea salt.

Assemble the Cake
Once the cake is cooled, spread the salted caramel mousse evenly on top.

Prepare the Ganache
Heat heavy cream in a saucepan until just boiling. Pour over chopped dark chocolate and let sit for 5 minutes. Stir until smooth.

Finish the Cake
Pour the ganache over the mousse layer, allowing it to drip down the sides. Chill in the refrigerator for at least 2 hours before serving.
