Prepare Ingredients
Chop the bacon, Portuguese sausage, and Spam into small pieces. Set aside.

Cook Meats
In a large skillet, melt 1 tablespoon of butter over medium heat. Add the chopped bacon and cook until crispy. Next, add the Portuguese sausage and Spam, cooking until browned. Remove from skillet and set aside, leaving the drippings in the skillet.

Make Omelet
In a mixing bowl, whisk the eggs until well blended. Pour the eggs into the skillet with the drippings over medium heat. Allow the eggs to cook undisturbed for 2-3 minutes.

Add Fillings
Once the eggs start to set, add the cooked meats, white cheddar cheese, and Lomi-Lomi tomatoes on one half of the omelet. Fold the other half over the fillings.

Finish Cooking
Cook for an additional 2-3 minutes or until the cheese is melted and the omelet is cooked through. Slide the omelet onto a plate.

Serve
Serve the omelet hot, with a choice of starch: toast (white or wheat), hash browns, or rice.
