    Marinate the Short Ribs

    In a bowl, mix honey, Dijon mustard, olive oil, salt, black pepper, and minced garlic. Coat the beef short ribs with this marinade and let them sit for at least 1 hour, preferably overnight in the refrigerator.

    Preheat the Oven

    Preheat your oven to 300°F (150°C).

    Sear the Ribs

    Heat a large skillet over medium-high heat. Sear the marinated short ribs on all sides until browned, about 3-4 minutes per side. Transfer the ribs to a baking dish.

    Prepare the Sauce

    In the same skillet, add the red wine and bring it to a boil, scraping up any browned bits. Add beef stock and fresh thyme, and let it simmer for about 5 minutes.

    Bake the Ribs

    Pour the sauce over the short ribs in the baking dish. Cover with foil and bake in the preheated oven for 2.5 to 3 hours, or until the ribs are tender.

    Prepare Kunia Lomi Tomato

    While the ribs are baking, prepare the Kunia Lomi Tomato by mixing the diced tomatoes with salt, pepper, and a drizzle of olive oil. Let it marinate for at least 30 minutes.

    Once the ribs are done, remove them from the oven and let them rest for 10 minutes. Serve the charred honey mustard beef short ribs with the Kunia Lomi Tomato on the side.
