    Prepare the Fries

    Begin by peeling and cutting the russet potatoes into fries. Rinse them in cold water and pat dry.

    Fry the Potatoes

    Heat vegetable oil in a deep fryer or large pot to 350°F (175°C). Fry the potatoes in batches until golden brown and crispy, about 5-7 minutes. Drain on paper towels and season with salt.

    Make the Black Garlic Butter

    In a small bowl, mash the black garlic cloves with a fork. In a saucepan, melt the unsalted butter and then mix in the mashed black garlic and kiawe smoked marrow. Stir until well combined and heated through.

    Cook the Ribeye Steak

    Season the ribeye steak with salt and black pepper on both sides. Heat a cast iron skillet or grill over high heat. Add the steak and sear for about 4-5 minutes on each side for medium-rare, or until it reaches your desired doneness.

    Assemble the Poutine

    On a serving plate, place the fries, drizzle the black garlic marrow butter over them, sprinkle cheese curds on top, and pour hot gravy over everything.

    Slice the ribeye steak and serve alongside the poutine fries. Enjoy!
