Prepare the Brussels Sprouts
Preheat your oven to 400°F (200°C). Trim the ends of the Brussels sprouts, then cut them in half. Place them in a bowl.

Season the Brussels Sprouts
Drizzle the olive oil over the Brussels sprouts. Season with salt and black pepper. Toss to coat evenly.

Roast the Brussels Sprouts
Spread the Brussels sprouts on a baking sheet in a single layer. Roast for about 20-25 minutes or until golden brown and crispy.

Make the Caesar Dressing
In a small bowl, whisk together lemon juice, Dijon mustard, Worcestershire sauce, minced garlic, and anchovy paste. Add about 1/4 cup of the reserved bacon fat and whisk until combined.

Combine and Serve
Once the Brussels sprouts are done roasting, remove them from the oven. Crumble the crispy bacon over the top, drizzle with the Caesar dressing, and sprinkle with grated Parmesan cheese. Toss to combine and serve warm.
