    Prepare the Vegetables

    Preheat your oven to 200°C (400°F). Trim the ends off the brussel sprouts and cut them in half. Rinse the cauliflower florets and set both aside.

    Toast the Pine Nuts

    In a dry skillet over medium heat, add the pine nuts. Toast them for about 3-5 minutes, stirring frequently until they are golden brown. Remove from heat and set aside.

    Cook the Vegetables

    In a large bowl, toss the brussel sprouts and cauliflower florets with olive oil, salt, and black pepper. Spread them on a baking sheet in a single layer.

    Roast the Vegetables

    Roast the vegetables in the preheated oven for 25-30 minutes, or until they are tender and browned, stirring halfway through.

    Make the Brown Butter

    In a small saucepan over medium heat, add the butter. Let it melt and then continue cooking until it turns golden brown and has a nutty aroma, about 5-7 minutes. Be careful not to burn it.

    Once the vegetables are done roasting, drizzle the brown butter over them, add the lemon juice, and sprinkle the toasted pine nuts on top. Toss gently to combine and serve warm.
