    Prepare the Potatoes

    Wash and quarter the red potatoes. In a large pot, bring salted water to a boil and add the potatoes. Cook until fork-tender, about 15 minutes. Drain and set aside.

    Cook the Brussels Sprouts

    While the potatoes are boiling, trim and halve the Brussels sprouts. In a skillet over medium heat, add 1 tbs of olive oil. Add the Brussels sprouts and sauté for 8-10 minutes until they are golden brown and tender. Season with salt and pepper to taste.

    Prepare and Cook the Pork Chops

    Season the pork chops with salt and black pepper. In a large skillet, heat the remaining olive oil over medium-high heat. Add the pork chops and sear for 4-5 minutes on each side until cooked through and golden brown. Add minced garlic in the last minute of cooking.

    Combine and Serve

    On a plate, serve the fried red potatoes alongside the sautéed Brussels sprouts. Top the pork chops with jade pesto and enjoy!
