Make the Pickles
Slice cucumbers and place them in a jar. Mix vinegar, salt, and any additional spices to taste, then pour over cucumbers. Let sit for at least 1 hour.

Prepare the Mustard Peppered Mayo
In a bowl, mix mayonnaise, Dijon mustard, and pepper until well combined. Set aside.

Blacken the Chicken
Coat the chicken breasts with olive oil and then sprinkle the blackening seasoning on both sides. Heat a skillet over medium-high heat and cook the chicken for about 6-7 minutes on each side or until cooked through.

Toast the Brioche Buns
In the same skillet, toast the brioche buns until golden brown.

Assemble the Sandwich
Spread the mustard peppered mayo on the bottom half of the brioche bun. Layer with romaine lettuce, sliced tomato, blackened chicken, and house-made pickles. Top with the other half of the bun.

Serve with French Fries
Fry or bake the French fries according to package instructions. Serve alongside the sandwich.
