Cooking Instructions
- 1
Prepare the Pesto
In a food processor, combine arugula, garlic, olive oil (2 tablespoons), and half of the Parmesan cheese. Blend until smooth. Adjust seasoning with salt and pepper.
- 2
Cook the Pasta
In a large pot of boiling salted water, cook the pasta according to package instructions until al dente. Drain and set aside, reserving 1 cup of pasta water.

Sauté the Sausage and Mushrooms
In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add sliced wild boar sausage and cook until browned. Add shiitake mushrooms and sauté until tender.
- 4
Cook the Shrimp
Add the cleaned Black Tiger shrimp to the skillet, cooking until they turn pink and opaque, about 3-4 minutes.
- 5
Combine and Serve
Add the cooked pasta to the skillet, along with the arugula pesto and reserved pasta water. Toss everything together until well combined. Serve hot, garnished with remaining Parmesan cheese.
