    Prepare the Beef Tenderloin

    Preheat your oven to 400°F (200°C). Season the beef tenderloin generously with salt and black pepper on all sides.

    Sear the Beef

    In a large oven-safe skillet, heat olive oil over medium-high heat. Once hot, add the beef tenderloin and sear for 3-4 minutes on each side until browned.

    Roast the Beef

    Transfer the skillet to the preheated oven and roast for 20-25 minutes, or until the internal temperature reaches 135°F (57°C) for medium-rare. Remove from the oven and let rest for 10 minutes.

    Cook the Mushrooms

    While the beef is resting, slice the Hamakua mushrooms. In a separate skillet, melt 2 tablespoons of butter over medium heat. Add the mushrooms and sauté for about 5-7 minutes until golden brown. Season with salt and pepper.

    Make the Garlic Butter

    In a small saucepan, melt the remaining 2 tablespoons of butter over low heat. Add minced garlic and cook for 1-2 minutes until fragrant. Remove from heat.

    Plate the Dish

    Slice the beef tenderloin and arrange it on plates. Top with sautéed mushrooms, drizzle with garlic butter, and finish with a splash of dashi tentsuyu. Garnish with chopped chives.
