Preparation and Cooking Steps

    Prepare the Rack of Lamb

    Preheat the oven to 400°F (200°C). In a small bowl, mix olive oil, minced garlic, chopped rosemary, salt, and black pepper. Rub this mixture all over the rack of lamb. Place the lamb in a roasting pan.

    Roast the Lamb

    Roast the lamb in the preheated oven for 25-30 minutes or until it reaches an internal temperature of 130°F (54°C) for medium-rare. Remove from the oven and let it rest for 10 minutes before slicing.

    Prepare the Brussels Sprouts

    While the lamb is roasting, prepare the Brussels sprouts. In a large skillet, add a tablespoon of olive oil and heat over medium heat. Add the halved Brussels sprouts, season with salt and pepper, and cook for about 10-12 minutes until they are tender and slightly caramelized.

    Add Parmesan

    Remove the skillet from the heat and sprinkle the grated Parmesan cheese over the Brussels sprouts. Toss to combine and let it sit for a minute to melt the cheese.

    Make the Demi-Glace

    In a saucepan, combine the Hawaiian Coffee Porter and beef stock. Bring to a boil and reduce to a simmer. Allow it to reduce by half, stirring occasionally. Remove from heat and whisk in the unsalted butter for a glossy finish.

    Serve

    Slice the rack of lamb into individual chops and serve with the Parmesan Brussels sprouts. Drizzle the Hawaiian Coffee Porter demi-glace over the lamb and enjoy!
