    Sauté the Aromatics

    In a large pot, heat olive oil over medium heat. Add chopped onion and sauté until translucent, about 5 minutes. Stir in minced garlic and grated ginger, cooking for an additional minute until fragrant.

    Cook the Pumpkin

    Add the cubed kabocha pumpkin to the pot. Stir to combine with the aromatics, then pour in the vegetable broth. Bring to a boil, then reduce heat and simmer for 15-20 minutes, or until the pumpkin is tender.

    Blend the Bisque

    Using an immersion blender, blend the mixture until smooth. Alternatively, transfer the mixture to a blender in batches and blend until smooth.

    Add Coconut Milk and Seasonings

    Return the blended bisque to the pot (if using a blender). Stir in coconut milk, salt, black pepper, cinnamon, and nutmeg. Heat over low until warmed through.

    Serve

    Ladle the bisque into bowls and enjoy warm.
