Cooking Instructions

  1. 1

    Prepare the Prime Rib

Preheat your oven to 450°F (230°C). In a small bowl, mix together the Alae salt, black pepper, minced garlic, rosemary, and thyme. Rub this mixture all over the prime rib roast.

  2. 2

    Sear the Roast

In a large oven-safe skillet, heat the olive oil over medium-high heat. Once hot, sear the prime rib on all sides until browned (about 4-5 minutes per side).

  3. 3

    Roast the Prime Rib

Transfer the skillet to the preheated oven and roast for 15 minutes. Then reduce the oven temperature to 325°F (165°C) and continue roasting until the internal temperature reaches 130°F (54°C) for medium-rare, about 1.5 to 2 hours.

  4. 4

    Rest the Roast

Remove the roast from the oven and let it rest for at least 20-30 minutes before carving.

  5. 5

    Make the Red Wine Jus

While the roast is resting, pour off excess fat from the skillet, leaving about 1 tablespoon. Place the skillet over medium heat and add 1 cup of red wine, scraping the bottom to deglaze. Simmer until reduced by half, about 10 minutes. Strain the jus and serve with the carved prime rib.
