Preparation and Cooking
- 1
Prepare the Prime Rib
Preheat your oven to 450°F (232°C). In a small bowl, combine the coarse sea salt, black pepper, minced garlic, rosemary, thyme, and olive oil to create a paste. Rub this mixture all over the prime rib roast, covering it thoroughly.
- 2
Roast the Prime Rib
Place the seasoned prime rib in a roasting pan, bone side down. Roast in the preheated oven for 20 minutes to develop a crust. Then, reduce the oven temperature to 325°F (163°C) and continue roasting for about 1.5 to 2 hours, or until the internal temperature reaches your desired doneness (130°F for medium-rare).
- 3
Prepare the Bone Marrow
While the prime rib is roasting, place the beef bone marrow pieces cut side up on a baking sheet. Season with salt and pepper, and roast in the oven for the last 30 minutes of the prime rib's cooking time.
- 4
Rest and Serve
Once the prime rib is done, remove it from the oven and let it rest for 30 minutes before slicing. Serve with the roasted bone marrow on the side, along with au jus and creamy horseradish sauce.
