    Prepare the Tuna

    Coat the ahi tuna steak in sesame seeds, ensuring all sides are covered. Season with salt and pepper.

    Sear the Tuna

    Heat the olive oil in a pan over medium-high heat. Sear the tuna for about 1-2 minutes on each side until a golden crust forms. Remove from heat and let it rest.

    Caramelize the Onion

    Thinly slice the onion. In the same pan, reduce heat to medium-low and add the onion. Cook until caramelized, about 10-15 minutes, stirring occasionally.

    Prepare the Fried Garlic

    Thinly slice the garlic cloves. In a small pan, heat oil over medium heat and fry the garlic until golden brown. Remove and drain on paper towels.

    Make the Spicy Ponzu Sauce

    In a small bowl, whisk together soy sauce, rice vinegar, sriracha, and lime juice. Adjust seasoning with salt and pepper to taste.

    Slice the seared tuna into thin pieces. Arrange on a plate with caramelized onions, sprinkle with scallions and fried garlic, and drizzle with spicy ponzu sauce.
