Preparation and Cooking Instructions

    Prepare the Bacon Marmalade

    In a skillet over medium heat, cook the bacon until crispy. Remove the bacon and chop it into small pieces. Reserve some bacon fat in the skillet.

    Cook the Cauliflower

    In the same skillet, add the chopped cauliflower and cook until tender, about 5-7 minutes. Stir in the bacon pieces, salt, and pepper.

    Prepare the Baby Potatoes

    In a pot, bring salted water to a boil. Add the baby potatoes and cook until fork-tender, about 15-20 minutes. Drain and let cool slightly.

    Truffle Parmesan Baby Potatoes

    Cut the baby potatoes in half and toss them with truffle oil, Parmesan cheese, salt, and pepper. Roast in a preheated oven at 400°F (200°C) for 15 minutes or until golden.

    Cook the Filet Mignon

    Season the filet mignon with salt and pepper. In a skillet, heat olive oil over high heat. Sear the filet for about 4-5 minutes on each side for medium-rare, or until desired doneness.

    Plate the Dish

    Serve the filet mignon alongside the truffle Parmesan baby potatoes and the cauliflower with bacon marmalade. Crumble blue cheese on top as desired.
