Cooking Instructions

  1. 1

    Prepare the Bacon Jam

In a small saucepan over medium heat, cook the bacon until crispy. Remove the bacon and chop it finely. Reserve some bacon fat in the pan. Add onions and cook until translucent, then stir in brown sugar, maple syrup, and a pinch of black pepper. Cook until thickened, about 10-15 minutes. Stir in the chopped bacon and set aside.

  2. 2

    Cook the Mushrooms

In the same pan, add the sliced mushrooms to the reserved bacon fat. Sauté over medium heat until golden brown and tender, about 5-7 minutes. Season with salt and pepper to taste.

  3. 3

    Form and Cook the Patties

In a bowl, combine the wild boar and Makaweli beef. Form into two patties, about ¾ inches thick. Season with salt and pepper. Grill or pan-fry the patties over medium-high heat for about 4-5 minutes per side, or until they reach your desired doneness.

  4. 4

    Assemble the Burger

Toast the burger buns on the grill or in a toaster. Spread a layer of chipotle aioli on the bottom half of the bun. Place the cooked patty on top, followed by a generous spoonful of bacon jam and grilled mushrooms. Top with the other half of the bun.
