Method

Preparing the Ribeye

  1. 1

    Cook the Ribeye

Preheat a grill or skillet over medium-high heat. Season the ribeye with salt and pepper. Cook for 5-7 minutes on each side for medium-rare, or until desired doneness. Let it rest for 5 minutes before slicing.

Whipping the Potatoes

  1. 2

    Prepare the Potatoes

Peel and chop the russet potatoes into uniform pieces. Boil in salted water until tender, about 15-20 minutes. Drain and return to pot.

  2. 3

    Whip the Potatoes

Add butter, heavy cream, salt, and pepper to the drained potatoes. Mash until smooth and creamy.

Cooking the Vegetables

  1. 4

    Sauté the Vegetables

In a skillet, heat olive oil over medium heat. Add minced garlic and sauté for 1 minute. Add carrots and green beans, season with salt and pepper, and cook until tender, about 5-7 minutes.

Making the Sauce

  1. 5

    Prepare the Buttery Cabernet Sauce

In a saucepan, sauté finely chopped shallots in butter until translucent. Add cabernet and beef stock, bring to a simmer, and reduce until sauce thickens. Season with salt and pepper.
