Preparation of Fish

    Prepare the Sole

    Rinse the sole fillets under cold water and pat dry with paper towels. Place them in a large bowl and drizzle with lemon juice, salt, and black pepper. Set aside to marinate for about 15 minutes.

Stuffing Preparation

    Make the Stuffing

    In a mixing bowl, combine crab meat, lobster meat, cream cheese, chives, garlic, and breadcrumbs. Mix well until all ingredients are fully combined and season with salt and pepper to taste.

Vegetable Preparation

    Grill the Vegetables

    Preheat the grill to medium-high heat. Toss the sliced zucchini, bell peppers, and red onion with olive oil, salt, and black pepper. Grill the vegetables until tender and lightly charred, about 5-7 minutes. Remove from grill and set aside.

Rice Preparation

    Cook the Wild Rice

    In a saucepan, combine wild rice, water, and a pinch of salt. Bring to a boil, then reduce heat to low, cover, and simmer for about 45 minutes or until rice is tender and water is absorbed. Fluff with a fork before serving.

    Stuff and Cook the Fish

    Preheat the oven to 375°F (190°C). Place a generous amount of the stuffing onto the center of each marinated sole fillet. Fold the fillets over to enclose the stuffing. Place the stuffed fillets on a baking sheet lined with parchment paper. Bake in the oven for 20-25 minutes or until the fish is cooked through and flakes easily with a fork.

    On a large plate, place a serving of wild rice. Arrange the grilled vegetables on the side and top with the baked stuffed sole fillets. Drizzle with additional olive oil and garnish with fresh herbs, if desired.
