Melt the Chocolate
Chop the dark chocolate into small pieces and place it in a heatproof bowl. Set the bowl over a pot of simmering water (double boiler) and melt the chocolate, stirring occasionally, until smooth. Remove it from the heat and let it cool slightly.

In a separate bowl, whip the heavy cream until it forms soft peaks. Be careful not to overwhip.

Slowly pour the melted chocolate into the egg mixture while continuously stirring to avoid cooking the eggs. Gently fold in the whipped cream until fully incorporated.

Divide the mousse into serving cups and refrigerate for at least 2 hours or until set.
