Chocolate Mousse

1. Melt the Chocolate

Chop the dark chocolate into small pieces and place it in a heatproof bowl. Set the bowl over a pot of simmering water (double boiler) and melt the chocolate, stirring occasionally, until smooth. Remove it from the heat and let it cool slightly.

2. Whip the Cream

In a separate bowl, whip the heavy cream until it forms soft peaks. Be careful not to overwhip.

3. Prepare the Egg Mixture

In another bowl, whisk together the egg yolks and sugar until pale and creamy. Stir in the vanilla extract.

4. Combine Ingredients

Slowly pour the melted chocolate into the egg mixture while continuously stirring to avoid cooking the eggs. Gently fold in the whipped cream until fully incorporated.

5. Chill the Mousse

Divide the mousse into serving cups and refrigerate for at least 2 hours or until set.

6. Preheat the Oven

Preheat your oven to 180°C (350°F) and line a baking sheet with parchment paper.

7. Make the Tuile Batter

In a mixing bowl, combine the melted butter, sugar, and vanilla extract. Mix well. Add in the flour and chopped hazelnuts, mixing until smooth.

8. Shape the Tuiles

Using a spoon, drop small amounts of the batter onto the prepared baking sheet, spreading them out to form thin circles (about 3 inches in diameter).

9. Bake the Tuiles

Bake in the preheated oven for about 8-10 minutes or until the edges are golden brown. Remove from the oven and let them cool slightly before transferring to a wire rack to cool completely.
