Add Dry Ingredients
Stir in flour and salt all at once. Mix vigorously until the dough pulls away from the sides of the pan and forms a ball, about 2-3 minutes.

Incorporate Eggs
Remove from heat and let it cool slightly. Add eggs one at a time, mixing well after each addition until the dough is smooth and glossy.

Pipe Eclairs
Preheat oven to 400°F (200°C). Transfer the dough to a piping bag fitted with a large round tip. Pipe 4-5 inch long strips onto a baking sheet lined with parchment paper.

Bake
Bake in the preheated oven for 25-30 minutes until golden brown and puffed. Do not open the oven door during baking.

Remove from the oven and let them cool completely on a wire rack.

Mix Egg Yolks
In a separate bowl, whisk together the egg yolks, cornstarch, and remaining sugar until smooth.

Thicken the Cream
Cook over medium heat, stirring constantly until the mixture thickens and bubbles. Remove from heat and stir in vanilla and butter.

Cool the Cream
Transfer the pastry cream to a bowl, cover with plastic wrap (pressing it directly onto the cream to prevent a skin from forming), and refrigerate until cool.
Chocolate Glaze

Prepare the Glaze
In a small saucepan over low heat, combine chocolate chips and heavy cream. Stir until melted and smooth.

Glaze the Eclairs
Dip the tops of each cooled eclair into the chocolate glaze, allowing the excess to drip off. Place back on the wire rack to set.
