    Prepare the Risotto

    In a saucepan, heat 2 tablespoons of olive oil over medium heat. Add the arborio rice and stir for 2 minutes until lightly toasted.

    In a separate skillet, heat 1 tablespoon of olive oil over medium-high heat. Add the shrimp, sprinkle with blackening spice, and cook for about 2-3 minutes on each side until cooked through. Remove and set aside.

    Prepare the Risotto Broth

    Gradually add the chicken broth to the rice, one ladle at a time, stirring frequently. Allow each ladle to be absorbed before adding the next. This process should take about 20 minutes.

    Once the rice is al dente, stir in the spinach and cherry tomatoes. Cook for an additional 2-3 minutes until the spinach wilts and the tomatoes are tender.

    While the risotto is cooking, season the salmon fillets with blackening spice, salt, and pepper. In a skillet, heat the remaining olive oil over medium-high heat and sear the salmon for about 4-5 minutes on each side or until cooked to your liking.

    Spoon a generous serving of risotto onto each plate, top with blackened salmon, and drizzle with the pesto cream sauce. Arrange the blackened shrimp around the salmon and risotto.
