Cook the Shrimp
In a separate skillet, heat 1 tablespoon of olive oil over medium-high heat. Add the shrimp, sprinkle with blackening spice, and cook for about 2-3 minutes on each side until cooked through. Remove and set aside.

Prepare the Risotto Broth
Gradually add the chicken broth to the rice, one ladle at a time, stirring frequently. Allow each ladle to be absorbed before adding the next. This process should take about 20 minutes.

Finish the Risotto
Once the rice is al dente, stir in the spinach and cherry tomatoes. Cook for an additional 2-3 minutes until the spinach wilts and the tomatoes are tender.

Make the Pesto Cream Sauce
In a small saucepan, heat the heavy cream over low heat. Stir in the basil pesto and season with salt and pepper. Heat until warmed through.

Plate the Dish
Spoon a generous serving of risotto onto each plate, top with blackened salmon, and drizzle with the pesto cream sauce. Arrange the blackened shrimp around the salmon and risotto.
