    Prepare the base

    In a large pot, heat the olive oil over medium heat. Add the diced pancetta and cook until it is crispy.

    Sauté vegetables

    Add the chopped onion, carrot, and celery to the pot. Sauté for about 5-7 minutes until they soften. Stir in the minced garlic and cook for another minute.

    Brown the meat

    Increase the heat to medium-high and add the ground beef. Cook until browned, breaking it up with a spoon as it cooks.

    Deglaze with wine

    Pour in the red wine and let it simmer for a few minutes until it reduces slightly.

    Add tomatoes and seasoning

    Stir in the crushed tomatoes, tomato paste, dried oregano, bay leaf, salt, and pepper. Bring to a simmer.

    Incorporate milk

    Add the milk to the sauce and mix well. This will help to soften the acidity of the tomatoes.

    Simmer the sauce

    Reduce the heat to low and let the sauce simmer gently for at least 30 minutes, stirring occasionally. The longer it simmers, the better the flavors will meld.

    Remove the bay leaf before serving. Serve over pasta of your choice and enjoy!
