Method

Preparation

  1. 1

    Make the Pizza Dough

In a bowl, combine warm water and yeast. Let it sit for about 5 minutes until frothy. In a large mixing bowl, combine flour and salt. Add the yeast mixture and olive oil. Mix until a dough forms. Knead for about 10 minutes until smooth. Cover with a damp cloth and let rise in a warm place for about 1 hour.

  2. 2

    Preheat the Oven

Preheat your brick oven to about 500°F (260°C) or as high as it will go.

  3. 3

    Prepare the Sauce

In a saucepan, heat the spicy marinara sauce over medium heat until warmed through. Season with salt to taste.

  4. 4

    Shape the Dough

Once the dough has risen, punch it down and divide it into two equal portions. Roll out each portion into a circle about 12 inches in diameter.

  5. 5

    Assemble the Pizza

Place the rolled-out dough on a pizza peel or baking sheet. Spread a half cup of spicy marinara sauce on each dough. Tear the buffalo mozzarella into pieces and distribute evenly on top of the sauce. Drizzle with olive oil.

  6. 6

    Bake the Pizza

Transfer the pizza into the preheated brick oven. Bake for about 8-10 minutes until the crust is golden and the cheese is bubbling.

  7. 7

    Finish with Basil

Remove the pizza from the oven and top with fresh basil leaves. Let it cool slightly before slicing and serving.
