    Make the Gnocchi Dough

    Boil the potatoes until tender, then peel and mash them. If using spinach, blanch and chop it finely. In a large bowl, combine the mashed potatoes, flour, egg, salt, and spinach (if using) until a dough forms. Knead gently until smooth.

    Shape the Gnocchi

    Divide the dough into sections and roll each into a long rope about 1/2 inch thick. Cut the rope into 1-inch pieces. Press each piece with a fork to create ridges for better sauce adhesion.

    Cook the Gnocchi

    Bring a large pot of salted water to a boil. Add the gnocchi in batches; they are done when they float to the surface, usually in about 2-3 minutes. Remove with a slotted spoon and set aside.

    Serve with Sauce

    Toss the cooked gnocchi with your choice of Bolognese, pomodoro, pesto pomodoro, or alfredo sauce. Serve hot and enjoy!
