In a blender, combine guajillo chiles, ancho chiles, garlic, cumin, oregano, salt, black pepper, apple cider vinegar, orange juice, and brown sugar. Blend until smooth.

Marinate the Pork

Cut the pork shoulder into large chunks and place in a bowl. Pour the marinade over the pork, ensuring all pieces are coated. Cover and refrigerate for at least 4 hours, or overnight for best results.

Cook the Pork

Preheat your grill or oven to medium-high heat. Remove the pork from the marinade and shake off excess. Grill or roast until cooked through and tender, about 25-30 minutes, turning occasionally.

While the pork is cooking, slice the pineapple into rings and grill for 3-4 minutes on each side until caramelized.
