Prepare the Calamari
In a mixing bowl, toss the calamari rings with salt and black pepper. Ensure they are evenly coated.
Coat with Flour
Place the all-purpose flour in a shallow dish. Dredge the seasoned calamari rings in the flour, shaking off any excess.
Heat the Oil
In a deep frying pan, heat the olive oil over medium-high heat until it reaches 180°C (350°F).
Fry the Calamari
Carefully add the calamari rings to the hot oil in batches. Fry for about 2-3 minutes or until golden brown and crispy. Use a slotted spoon to remove them and place on a paper towel-lined plate to drain excess oil.
Prepare the Plate
On a serving plate, create a bed of fresh arugula. Arrange the fried calamari on top.
Add Sauces
Drizzle the sugo pomodoro and pesto over the calamari. Squeeze fresh lemon juice over the top for added flavor.
Serve
Serve immediately while hot, garnished with extra lemon wedges if desired.
