Salmon/Tuna Tartare

Peel the fresh ginger and finely grate it until you have about 1.5 cups packed grated ginger.

Grate ginger

Place the grated ginger in a large heatproof bowl or pot. Pour 4 cups of warm (not boiling, about 50–60°C / 120–140°F) water over the ginger. Stir, cover, and let steep for 30–45 minutes to extract flavor.

After steeping, press or strain the ginger through a fine mesh sieve or cheesecloth into another bowl or pot, extracting as much liquid and pulp flavor as possible. You should end up with roughly 3–4 cups of ginger-infused liquid.

In a medium saucepan combine the strained ginger liquid and the 2 cups granulated sugar. Warm gently over medium-low heat and stir until sugar fully dissolves (do not boil aggressively). This creates the ginger syrup. Remove from heat and cool to lukewarm (about 30–35°C / 85–95°F).

Stir in the 1/2 cup fresh lemon juice and 1/4 tsp kosher salt into the cooled syrup. The acid brightens flavor and the salt rounds it out.

In a small cup, add the 1 tsp active dry yeast to 1/4 cup of the remaining warm water (about 30–35°C / 85–95°F). Sprinkle yeast over the water, stir gently, and let rest 5–7 minutes until foamy. If the yeast does not foam, the yeast may be inactive—replace and try again.

In a large clean container or pot, combine the ginger-lemon syrup, the activated yeast mixture, the remaining warm water (about 4 cups), and the cold water (about 6 cups). Stir thoroughly to combine. This yields a total volume of roughly 10–12 cups (about 2.5–3 liters) of ginger beer base; adjust proportions if using different bottle capacity.

Taste the mixture and adjust sweetness or acidity now if desired (add up to 1/4 cup more sugar for sweeter, or a tablespoon more lemon for brighter). Remember yeast will ferment some sugar and reduce sweetness slightly.

Using a funnel, pour the mixture into clean plastic soda bottles or flip-top glass bottles, leaving about 2–3 inches (5–7 cm) headspace in each bottle to allow pressure to build. Do not overfill.

Seal bottles tightly. Let them sit at room temperature (18–24°C / 64–75°F) for 24–48 hours to carbonate. Check pressure after 24 hours by gently squeezing plastic bottles—if firm, carbonation is developing. For glass bottles, open one briefly after 24 hours to release excess pressure then reseal, or use bottles rated for fermentation to avoid risk.

When bottles feel firm and adequately carbonated (usually 24–48 hours; warmer temps speed fermentation), move them to the refrigerator to slow fermentation. Chill at least 12 hours before serving. Refrigeration also reduces risk of overpressurization.

Carefully open a chilled bottle over a sink (some foam may release). Pour the ginger beer into glasses over ice if desired. Garnish with mint sprig and lime or lemon wedge. Serve cold.

Store ginger beer in the fridge and consume within 1–2 weeks. Check bottles periodically and burp if pressure seems excessive. For longer storage, refrigerate promptly and keep cold.

Combine 2 cups water and the cinchona bark in a small saucepan. Add the chopped lemongrass, citrus zests, bitter orange peel, coriander seeds, crushed cardamom pods, allspice berries and juniper berries (if using). Bring to a gentle simmer over medium-low heat, then reduce heat to low and maintain a bare simmer for 10–15 minutes, stirring occasionally. Do not boil aggressively (cinchona can foam and become bitter).

Infusion

Remove the pan from heat and allow the mixture to steep, covered, for 30 minutes to extract aromatic and bitter compounds. After steeping, strain the liquid through a fine-mesh sieve lined with cheesecloth into a heatproof bowl to remove solids. Press gently on solids to extract as much liquid as possible, then discard solids (reserve if you wish to re-infuse lightly).

Steep & Strain

Stir in the juice of 1 lemon and 1/2 lime into the warm strained infusion.

Add Citrus Juice

In a separate small saucepan, combine 1 cup granulated sugar and 1 cup water for the syrup. Heat gently over medium heat, stirring until sugar fully dissolves and the mixture is clear — do not boil vigorously. Remove from heat as soon as dissolved.

Make Simple Syrup

While the simple syrup is still warm, whisk it into the strained cinchona-citrus infusion until fully combined. Taste carefully (a small taste only — tonic syrup is concentrated). If the syrup is too bitter, add up to 2 tbs more sugar dissolved in a bit of warm water to balance. If too sweet, add a splash more lemon or lime juice. Allow the combined syrup to cool to room temperature.

Combine & Adjust

For a clearer tonic syrup, pass the cooled syrup through a fine mesh sieve lined with coffee filter or cheesecloth one more time into a clean bottle or jar. Refrigerate. The syrup will keep 2–3 weeks refrigerated.

Final Strain & Bottle

Mixing: For a single serving, fill a glass with ice. Pour 120 ml (about 4 fl oz) chilled club soda into the glass. Add 20–30 ml (about 1–1.5 tbsp) tonic syrup to start (ratio depends on desired bitterness). Stir gently and taste. Typical mixing ratios range from 1:5 to 1:3 (tonic syrup to soda) by volume; adjust to preference. In this recipe the suggested 120 ml syrup quantity refers to a batch amount — use small measured amounts when serving to avoid over-concentration.

Garnish & Serve: Garnish with a lemon or lime wheel. Serve immediately. Keep unused tonic syrup refrigerated and use within 2–3 weeks; dilute with chilled sparkling water when ready to drink.

Scaling: This concentrate yields roughly 300–350 ml of tonic syrup depending on evaporation and yields. Dilution guidance: start with 1 part tonic syrup to 4–5 parts sparkling water and adjust to taste.

Combine the 1 cup granulated sugar and 1/2 cup water in a small saucepan. Warm over medium-low heat, stirring frequently, until the sugar dissolves completely and the liquid is clear (do not boil vigorously). This yields a simple syrup base.

Make sugar syrup base

Add the 1 tsp lemon zest and 1 tsp lime zest to the warm syrup. Keep the heat low and let the mixture steep for 3–4 minutes, stirring occasionally to help release oils from the zest. Do not let the syrup boil.

Infuse citrus

Remove the saucepan from the heat. Stir in 2 tbsp fresh lemon juice, 2 tbsp fresh lime juice, and 1/2 tsp citric acid until fully dissolved. If the syrup seems too thick, stir in up to 2 tbsp plain water to reach a pourable consistency. Taste and adjust: add up to 1 tsp simple syrup (or superfine sugar) if you prefer sweeter, or another 1/4 tsp citric acid if you want brighter acidity.

Finish with juices and acid

Let the syrup cool to room temperature. Once cool, strain the syrup through a fine-mesh sieve to remove the zest solids, collecting a clear citrus syrup. Transfer to a clean bottle or jar and refrigerate if not using immediately. The concentrate will keep chilled for about 1 week.

Fill two tall glasses with ice (about 1 cup ice per glass). Add 2 tbsp of the prepared citrus syrup concentrate to each glass (this recipe makes roughly 1 cup concentrate; adjust concentration to taste).

Pour 2 cups chilled carbonated water into each glass over the syrup and ice (a 1:8 syrup-to-water ratio by volume; adjust to taste for sweeter or tarter). Gently stir once or twice to combine, taking care not to flatten the carbonation.

Garnish each glass with a lemon or lime wheel on the rim or floated in the drink. Serve immediately while fizzy.

Notes: For a more authentic bright soda flavor, use freshly carbonated water and make sure the syrup is cold. To make larger batches, scale the syrup ingredients proportionally and keep the same syrup-to-water ratio when assembling. If you want a caffeine-free lemon-lime soda with more effervescence, carbonate the final mixed beverage in a soda siphon or home carbonation system following the manufacturer's instructions (do not carbonate in a sealed bottle with high sugar concentration unless designed for it).

In a medium saucepan, add 2 cups water, 1 cup dark brown sugar, 1 cup granulated sugar and 2 tablespoons molasses. Stir to combine.

Combine sugars and liquids

Place saucepan over medium heat. Stir frequently until sugars dissolve and the mixture comes to a gentle simmer (about 5–7 minutes). Do not boil vigorously; just keep a steady simmer so sugars fully dissolve and flavors will infuse later.

Heat to dissolve

Remove from heat and stir in 1 tablespoon vanilla extract. If using the optional split vanilla bean, add it now to steep with the herb blend in the next step.

Add vanilla

Place the dried sarsaparilla root, sassafras root (or extract), wintergreen leaves (or extract), licorice root, burdock root (if using), star anise, 1 teaspoon ground cinnamon, sliced fresh ginger, 4 allspice berries and 6 peppercorns into a fine-mesh tea infuser, a small cheesecloth pouch, or directly into the saucepan if you will strain carefully later.

Prepare herbs and spices

Place the pouch or infuser into the hot syrup mixture (from the Syrup Base step). Cover and let steep for 30–45 minutes off the heat if you want a milder flavor, or up to 60 minutes for a stronger, more concentrated root beer character. Taste after 30 minutes and remove earlier if the wintergreen or sassafras notes are too strong.

Steep the blend

Remove the herb pouch or strain the syrup through a fine mesh sieve lined with cheesecloth into a clean bowl or jar to remove all solids. Press gently on solids to extract the concentrated syrup, then discard solids. If you used a vanilla bean, scrape its seeds into the syrup before discarding the pod.

Strain

Allow the strained syrup to cool to room temperature. This yields a concentrate. If you prefer a sweeter or stronger soda, you can reduce the syrup further by simmering gently 5–10 minutes before cooling.

Make root beer concentrate

To serve, dilute the concentrate with cold water at a ratio of about 1 part concentrate to 3 parts cold water (adjust to taste). For example, mix 1 cup concentrate with 3 cups cold water. Add 1 teaspoon fresh lemon juice per quart of finished soda to brighten flavor if desired. Chill the diluted mixture thoroughly in the refrigerator.

Dilute and chill

If you do not have a soda siphon or carbonator, mix chilled diluted root beer with an equal volume of chilled club soda or sparkling water just before serving to maintain fizz. Pour over ice if desired.

Carbonate and serve (club soda method)

If you have a home carbonation system (SodaStream or similar), chill the diluted mixture and carbonate according to the manufacturer's instructions. Carbonate conservatively then taste — you can add additional pulses if you like stronger effervescence. Use a bottle rated for flavored liquids if required by your device.

Carbonate with home carbonator (optional)

Pour carbonated root beer into glasses, add ice if desired, and garnish with a small vanilla bean, a sprig of mint, or a maraschino cherry. Store remaining concentrate refrigerated for up to 2 weeks; keep diluted carbonated soda chilled and consume within 1–2 days for best fizz.

If your Red Bull isn't already chilled, refrigerate the can for at least 2 hours or place it in an ice bath for 15–20 minutes until cold. Choose a tall highball or Collins glass. Fill the glass with 6 ice cubes to keep the drink cold and crisp.

Chill and prepare glass

Open the chilled can carefully. Hold the glass at a slight angle and slowly pour the entire 250 ml can into the glass over the ice to preserve carbonation and a light head.

Pour Red Bull

If desired, squeeze the lime wedge lightly over the drink and drop it in for a touch of acidity, and tuck a small mint sprig against the inside of the glass for aroma. Serve immediately while fizzy and cold.

Consumption note: Red Bull is a caffeinated energy drink. Consume responsibly. Do not mix with alcohol if you want to avoid masking intoxication, and follow health guidance for caffeine intake.

Select a chilled 16–20 oz highball or tall water glass. Fill the glass with 6 ice cubes to bring the serving temperature down quickly.

Prepare glass

Place 3 bruised edible herb leaves and 3 thin cucumber slices into the glass. Add 1 teaspoon of fresh lemon zest, distributing the zest around the ice and sides of the glass so aroma is released.

Add aromatics

Measure 2 teaspoons of mineral drop solution (a concentrated calcium/magnesium trace mineral liquid) and pour it over the ice and aromatics. This re-mineralizes the water and gives a subtle mineral finish reminiscent of natural spring sources.

Add mineral drops

Slowly pour 16 fl oz of chilled natural spring water into the glass over the back of a spoon (or down the ice) to preserve clarity and gently mix with the mineral drops.

Pour water

If you prefer a lightly fizzy profile, top with 2 fl oz chilled sparkling mineral water. Pour gently to preserve bubbles.

Optional effervescence

Give the drink 1 gentle stir with a long bar spoon to integrate minerals and aromatics without bruising herbs further. Garnish by tucking one cucumber slice against the inside of the glass and placing a small sprig of the bruised herb on top.

Final stir and finish

Serve immediately while cold. Provide a straw if requested.

If possible, place the glass in the freezer for 5–10 minutes or fill it with ice water while you gather ingredients so your drink stays bubbly longer.

Fill the chilled glass with 3–4 ice cubes, leaving room for the sparkling water and garnishes.

If using simple syrup or honey, add 1 teaspoon to the glass now. If using, gently bruise the mint leaves by clapping them between your palms or gently tapping with the back of a spoon to release oils, then add the mint and cucumber slices to the glass. Lightly stir once to incorporate the sweetener and aromatics.

Slowly pour 1 cup of chilled sparkling water into the glass over the back of a spoon or down the side of the glass to preserve carbonation and prevent excessive foaming.

Squeeze the lemon or lime wedge over the drink to release a few drops of juice, then drop the wedge into the glass as a garnish.

Finish with citrus

Give the drink one gentle stir to combine flavors (avoid vigorous stirring to keep fizz). Serve immediately while cold and effervescent.

Roll lemons on the counter under your palm to loosen juices. Halve the lemons and use a juicer or reamer to extract juice until you have 1 cup (about 4–6 lemons). Strain the juice through a fine-mesh sieve into a measuring cup to remove seeds and excess pulp if you prefer a clear lemonade.

In a large pitcher (about 2–2.5 quart capacity), combine the 1 cup fresh lemon juice, 1 cup cooled simple syrup, and 3 cups cold water. Stir thoroughly and taste.
