Method
Prepare sushi rice
Rinse rice
Place 1/2 cup short-grain sushi rice in a fine-mesh sieve and rinse under cold running water, stirring with your hand, until water runs nearly clear (about 3–4 minutes). Drain well.
Cook rice
Combine rinsed rice and 0.6 cups water in a small saucepan with a tight-fitting lid. Bring to a gentle simmer over medium heat, then reduce heat to low, cover, and cook undisturbed for 12–15 minutes until water is absorbed. Remove from heat and let rest, covered, for 10 minutes.
Season rice
While rice rests, gently heat 1 tablespoon rice vinegar, 1/2 teaspoon sugar and 1/4 teaspoon salt in a small microwave-safe bowl or in a small saucepan just until sugar dissolves (do not boil). Transfer cooked rice to a shallow bowl or wooden hangiri if available. Pour vinegar mixture evenly over rice and fold gently with a rice paddle or spatula to combine while fanning or allowing steam to escape, so rice cools to near room temperature. Keep rice slightly warm — about body temperature.
Form rice balls (nigiri bases)
Wet your palms in the water/vinegar bowl to prevent sticking. Take about 1.5 tablespoons of seasoned rice (a compacted oval about 1.5–2 inches long) and shape gently into a bite-sized oblong using your fingers and thumbs; avoid compressing too hard — rice should hold shape but remain fluffy. Repeat to make 5 pieces. Place on a plate, seam-side down.
Prepare proteins
Slice fish
Using a very sharp knife, slice each piece of sushi-grade fish (tuna, salmon, white tuna) into 5–6 mm (about 1/4 inch) thick slices, cut at a 45-degree angle to make an oblong roughly the same length as the rice ovals (about 1.5–2 inches). Pat slices dry with a paper towel.
Prepare shrimp
If shrimp are cooked but unbutterflied, butterfly by slicing along the belly and opening it flat; press lightly to make an even shape and remove the vein if present. If raw shrimp are used, quickly poach in simmering water for 1–2 minutes until opaque, then cool in an ice bath, drain and butterfly. Lightly press butterflied shrimp to an even thickness to sit over rice.
Prepare crabstick
If using long imitation crabstick, halve lengthwise and gently press to flatten slightly so it sits neatly over the rice.
Assemble nigiri (5 pieces)
Set one rice oval on your palm or work surface. Dab a very small smear of wasabi (about 1/8 tsp) onto the top of the rice where the fish will sit (optional — omit if guests prefer no wasabi). Place the matching protein slice over the rice and press gently at both ends to adhere. Repeat for each protein: tuna, salmon, white tuna, shrimp, crabstick. Arrange on a serving plate with a little space between pieces.
For shrimp nigiri: position the shrimp with the tail end extending slightly off the rice for a classic presentation. For crabstick: place seam-side down so it looks neat.
If desired, lightly brush each fish with a few drops of soy sauce using a spoon or a pastry brush, or serve soy on the side for dipping.
Finish & garnish
Sprinkle a pinch (about 1/8–1/4 tsp total) of toasted white sesame seeds over the fish if using, and top one or two pieces with a few microgreens or a sliver of scallion for color.
Serve immediately with pickled ginger and soy sauce and a small dab of wasabi on the side. Nigiri is best eaten within 15–30 minutes of assembly to maintain rice texture and fish freshness.
