Measure tea
Measure 2 teaspoons of loose-leaf green tea per 8 oz cup. If using tea bags, use one standard-size bag per cup.
Heat water
Heat fresh cold water to between 170°F and 185°F (approx. 77–85°C). If you don't have a thermometer, bring the water to a gentle simmer and let it sit off heat for 1 minute. Do not use boiling water to avoid bitterness.
Prewarm cup or teapot
Pour a little of the hot water into your teacup or teapot, swirl to warm, then discard the warming water. This helps maintain steeping temperature.
Remove leaves
Remove the tea leaves or tea bag promptly at the end of the steeping time to prevent over-extraction and bitterness.
Finishing (optional)
Taste the tea. If desired, add up to 1 teaspoon of honey or 1 teaspoon of fresh lemon juice and stir gently until incorporated. Adjust to taste. Serve hot.
