Potato Cakes Preparation

    Prepare the Potatoes

    Peel and dice the Yukon gold potatoes. Place them in a large pot of salted water and bring to a boil. Cook until fork-tender, about 15-20 minutes. Drain and allow to cool slightly.

    Mash the Potatoes

    In a large mixing bowl, mash the cooked potatoes until smooth. Allow to cool completely.

    Mix Ingredients

    Add the Cashel blue cheese, grated Asiago, sharp cheddar, chopped onion, chopped bell pepper, salt, black pepper, flour, and beaten egg to the mashed potatoes. Mix until well combined.

    Form the Cakes

    Using your hands, form the mixture into patties, about 1/2 inch thick. Place on a tray and refrigerate for 30 minutes to firm up.

    Fry the Cakes

    In a large skillet, heat vegetable oil over medium-high heat. Once hot, carefully add the potato cakes in batches. Fry until golden brown, about 3-4 minutes per side. Drain on paper towels.

Ranch Dressing Preparation

    Mix Ranch Ingredients

    In a bowl, combine mayonnaise, sour cream, dried dill, garlic powder, onion powder, buttermilk, salt, and black pepper. Whisk together until smooth and well combined.

    Chill the Dressing

    Cover the ranch dressing and refrigerate for at least 30 minutes to allow the flavors to meld.
