Beef Stew Preparation

    Sear the Beef

    In a large pot, heat the olive oil over medium-high heat. Add the cubed Angus beef and sear until browned on all sides, about 5-7 minutes. Remove the beef and set aside.

    Sauté the Vegetables

    In the same pot, add the diced onion, minced garlic, chopped celery, and sliced carrots. Sauté for about 5 minutes until the vegetables are softened.

    Combine Ingredients

    Return the seared beef to the pot. Stir in the beef broth, tomato paste, dried thyme, bay leaves, salt, and black pepper. Bring to a boil.

    Simmer the Stew

    Reduce the heat to low, cover the pot, and let the stew simmer for about 1.5 to 2 hours, or until the beef is tender.

Champ Potatoes Preparation

    Boil the Potatoes

    In a large pot, cover the chopped potatoes with water and bring to a boil. Cook until tender, about 15-20 minutes.

    Mash the Potatoes

    Drain the potatoes and return them to the pot. Add butter and milk, then mash until smooth.

    Add Green Onions

    Fold in the chopped green onions and season with salt and pepper to taste.

Assembly

    Ladle the beef stew into bowls and top with a generous scoop of champ potatoes. Enjoy your traditional beef stew!
