Preparation
- 1
Slow Cook the Peas
In a medium saucepan, add 2 cups of green peas and cover with water. Bring to a boil over high heat, then reduce the heat to low and cover. Let simmer for 30 minutes or until the peas are tender.
- 2
Drain and Season
Once the peas are cooked, drain any excess water. Then, add 1 tsp of sea salt and 0.5 tsp of black pepper to the peas. Stir gently to combine.
- 3
Mash the Peas
Using a potato masher or the back of a fork, smash the peas to your desired consistency. You can leave some peas whole for texture.
- 4
Add Mint and Butter
Finely chop 0.25 cups of fresh mint leaves and add them to the smashed peas along with 2 tbsp of whipped butter. Stir until the butter melts and the ingredients are well combined.
