Method

Preparing the Steak Tips

    Season the Steak

    In a bowl, season the Angus beef steak tips with salt and black pepper, ensuring they are evenly coated.

    Sear the Steak

    In a large skillet, heat olive oil over medium-high heat. Add the steak tips and sear for about 3-4 minutes on each side for medium doneness. Remove from heat and let rest.

Making the Whiskey Peppercorn Cream Sauce

    Sauté Shallots and Garlic

    In the same skillet used for the steak, reduce heat to medium and add butter. Once melted, add minced shallot and garlic, sautéing until translucent.

    Add Whiskey and Cream

    Carefully add Jameson whiskey to the skillet, scraping up any browned bits. Simmer for 1-2 minutes, then stir in the heavy cream and crushed green peppercorns. Cook until slightly thickened.

    Finish the Sauce

    Add chopped parsley to the sauce, stir well, and season with salt and pepper to taste.

Preparing Champ Potatoes

    Boil the Potatoes

    In a large pot, add cubed potatoes and cover with water. Bring to a boil and cook until tender, about 15-20 minutes.

    Drain the potatoes and return to the pot. Add butter, milk, and chopped green onions. Mash until creamy and well combined. Season with salt and pepper to taste.

Steaming Mixed Vegetables

    In a steamer basket, add broccoli, carrots, and cauliflower. Steam over boiling water for about 5-7 minutes until tender but still vibrant.

    Remove the vegetables from the steamer and season with salt and pepper to taste.

    On each plate, serve a portion of steak tips topped with whiskey peppercorn cream sauce, a side of champ potatoes, and a serving of steamed mixed vegetables.
