1. Prepare the Potatoes
Wash and peel the Russet potatoes. Cut them into thin strips about 1/4 inch thick.
2. Soak the Potatoes
Soak the cut potatoes in cold water for at least 30 minutes. This helps to remove excess starch and will make the fries crispier.
3. Dry the Potatoes
Drain the soaked potatoes and pat them dry with a clean kitchen towel.
5. Fry the Potatoes
Fry the potatoes in batches for about 5-7 minutes until golden brown and crispy. Remove them with a slotted spoon and place them on paper towels to drain excess oil.
6. Season the Fries
While the fries are still hot, sprinkle with salt to taste.

7. Sauté the Onions
In a saucepan, heat 2 tablespoons of vegetable oil over medium heat. Add the finely chopped onion and sauté until translucent, about 5 minutes.
8. Add Garlic
Add the minced garlic to the onions and cook for an additional 1-2 minutes until fragrant.
9. Make the Roux
Stir in the curry powder and flour, cooking for about 2 minutes to form a roux.
10. Add Liquid Ingredients
Gradually pour in the vegetable broth while whisking to avoid lumps. Add soy sauce, brown sugar, salt, and black pepper.
11. Simmer the Gravy
Bring the mixture to a simmer and cook for about 10-15 minutes until thickened to your desired consistency.
12. Serve
Spoon the hot curry gravy over the crispy fries and serve immediately.
