    Prepare the Vegetables

    Clean the leeks thoroughly to remove any grit. Slice the leeks into thin rings. Peel and dice the potatoes into small cubes. Peel and dice the carrots. Mince the garlic cloves.

Cooking

    Sauté the Leeks and Garlic

    In a large pot, heat 2 tablespoons of olive oil over medium heat. Add the sliced leeks and minced garlic, and sauté for about 5 minutes until softened and fragrant.

    Add the Vegetables

    Add the diced potatoes and carrots to the pot. Stir to combine with the leeks and garlic.

    Add the Broth and Seasonings

    Pour in the vegetable broth and add the salt, black pepper, thyme, and bay leaf. Bring the mixture to a boil.

    Simmer the Soup

    Reduce the heat to low, cover the pot, and let the soup simmer for about 25-30 minutes, or until the potatoes and carrots are tender.

    Blend the Soup

    Remove the bay leaf from the pot. Use an immersion blender to puree the soup until smooth. If you prefer a chunkier texture, blend only half of the soup.

    Add Cream

    Stir in the heavy cream and heat the soup gently over low heat until warmed through. Do not let it boil.

Serving

    Garnish and Serve

    Ladle the soup into bowls. Garnish with chopped chives and croutons on top. Serve hot.
