    Chop the Vegetables

    Finely chop the onion, bell pepper, tomatoes, and mushrooms. Aim for uniform pieces to ensure even cooking.

    Whisk the Eggs

    In a bowl, crack the eggs and whisk them together until well combined. Add salt and black pepper to the mixture.

    Heat the Pan

    In a non-stick skillet, heat the olive oil over medium heat until shimmering.

    Sauté the Vegetables

    Add the chopped onions and bell peppers to the skillet. Sauté for about 3-4 minutes until they start to soften. Then, add the mushrooms and continue to cook for another 2 minutes until all vegetables are tender.

    Add Tomatoes

    Stir in the chopped tomatoes and cook for another minute until they are heated through.

    Pour in the Eggs

    Reduce the heat to low and pour the whisked eggs evenly over the sautéed vegetables in the skillet.

    Sprinkle the Swiss cheese evenly over the top of the omelet.
