Separate the Eggs
Carefully separate the egg yolks from the egg whites, placing the yolks in a large mixing bowl and the whites in a separate bowl.

Whisk Egg Yolks and Sugar
Add the granulated sugar to the egg yolks and whisk together until the mixture is thick and pale in color.

Combine Milk and Cream
In a saucepan over medium heat, combine the whole milk and heavy cream. Heat until it is hot but not boiling.

Add Flavorings
Stir in the vanilla extract, freshly grated nutmeg, and Irish whiskey into the eggnog mixture.

Whip Egg Whites
Using a clean whisk or electric mixer, whip the egg whites until soft peaks form.

Fold in Egg Whites
Gently fold the whipped egg whites into the eggnog mixture until well combined.

Chill
Cover the eggnog mixture and refrigerate for at least 2 hours or until chilled.

Serve
Pour the chilled eggnog into glasses, and sprinkle ground cinnamon and additional nutmeg on top for garnish. Serve immediately.
