    Prepare the Ingredients

    Chop the Irish bacon, onion, and bell pepper into small pieces. Grate the Dubliner cheese and set aside.

Cooking

    Cook the Bacon and Vegetables

    In a skillet over medium heat, melt 1 tablespoon of butter. Add the chopped Irish bacon and cook until crispy, about 4-5 minutes. Add the chopped onion and bell pepper to the skillet, cooking for an additional 3-4 minutes until softened.

    Prepare the Eggs

    In a mixing bowl, whisk together the eggs, George's vodka, salt, and black pepper until well blended.

    Pour in the Eggs

    Pour the egg mixture into the skillet over the bacon and vegetables. Cook without stirring for about 3-4 minutes, allowing the edges to set.

    Add the Cheese

    Once the edges are set, sprinkle the grated Dubliner cheese over the top of the omelet. Cover the skillet with a lid and cook for an additional 2-3 minutes until the cheese is melted and the center is fully cooked.

    Serve

    Fold the omelet in half and carefully slide it onto a plate. Serve immediately, garnished with additional black pepper if desired.
