Crab Cake Preparation

Make the Crab Cake Mixture
In a large mixing bowl, combine crab meat, mayonnaise, Dijon mustard, Worcestershire sauce, egg, breadcrumbs, green onion, Old Bay seasoning, salt, and black pepper. Gently mix until thoroughly combined.

Form the Crab Cakes
Divide the mixture into equal portions and shape them into patties, about 1/2 inch thick. Place on a plate and refrigerate for at least 30 minutes to firm up.

Prepare the Garlic Herb Spread
In a small bowl, soften the butter and mix in minced garlic, chopped parsley, and chopped chives until well combined.
Sandwich Assembly

Assemble the Sandwich
Spread the garlic herb mixture on one side of each slice of sourdough bread. Place a cooked crab cake on one slice, followed by a slice of provolone cheese. Top with the other slice of bread, herb side down.

Toast the Sandwich
In the same skillet used for the crab cakes, add the sandwich and cook over medium heat until the bread is toasted and the cheese is melted, about 3-4 minutes per side.

Serve the crab cake sandwich hot with a side of crispy french fries.
