    Prepare the Cabbage

    Remove the core of the cabbage head and carefully separate the leaves. Blanch the leaves in boiling water for about 2-3 minutes until they are tender. Drain and set aside.

    Make the Champ Potatoes

    Peel and chop the champ potatoes into small chunks. Boil them in salted water until fork-tender, about 15-20 minutes. Drain and mash the potatoes, adding salt and pepper to taste.

    Prepare the Corned Beef

    Finely chop the Angus corned beef and mix it into the mashed potatoes until well combined.

    Assemble the Wraps

    Take one blanched cabbage leaf, spoon some of the champ potato and corned beef mixture onto the center of the leaf, fold the sides over, and roll it up tightly. Repeat with the remaining leaves and filling.

    Cook the Wraps

    Heat olive oil in a large skillet over medium heat. Add the cabbage wraps seam side down and cook for about 5-7 minutes, turning gently until they are golden brown on all sides.

    Prepare the Sauce

    In a small bowl, whisk together the Dijon mustard, honey, apple cider vinegar, olive oil, salt, and black pepper until smooth and well combined.
