    Prepare the Chicken

    Preheat a grill or grill pan over medium heat. Season the chicken breasts with olive oil, salt, and black pepper. Grill the chicken for 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C). Remove from heat and let rest.

    Cook the Bacon

    In a skillet over medium heat, add the pecanwood smoked shoulder bacon slices. Cook for about 3-4 minutes on each side or until crispy. Remove from the skillet and drain on paper towels.

    Prepare the Avocado Spread

    Cut the avocado in half, remove the pit, and scoop the flesh into a bowl. Mash the avocado with a fork and mix in lemon juice, salt, and pepper to taste.

    Assemble the Sandwich

    Toast the slices of country white bread until golden brown. Spread a generous layer of the smashed avocado on the bottom slice of each sandwich, add the grilled chicken, top with crispy bacon, and cover with the other slice of bread.

Fries

    Prepare the Potatoes

    Wash and peel the russet potatoes. Cut them into thin strips to create fries.

    Fry the Potatoes

    In a deep fryer or large pot, heat the vegetable oil to 350°F (175°C). Carefully add the potato strips in batches, frying until golden brown and crispy, about 4-5 minutes. Remove with a slotted spoon and drain on paper towels.

    Season the Fries

    While the fries are still hot, sprinkle with salt to taste.
