Prepare Potatoes
Peel the Russet potatoes and shred them using a box grater or food processor. Place the shredded potatoes in a clean kitchen towel and squeeze out excess moisture.

Mix Ingredients
In a large mixing bowl, combine the shredded potatoes, all-purpose flour, baking powder, salt, and black pepper. Mix well to ensure the flour coats the potatoes evenly.

Heat Oil
In a large skillet, heat the vegetable oil over medium heat. You will need enough oil to cover the bottom of the skillet.

Fry the Cakes
Scoop about 1/4 cup of the potato mixture into the hot oil, flattening it slightly to form a cake. Fry for about 4-5 minutes on each side or until golden brown and crispy. Transfer to a paper towel-lined plate to drain excess oil.

Serve the Boxty Bites warm, alongside the bacon jalapeño ranch dressing for dipping.

Mix Dressing Ingredients
In a medium bowl, combine mayonnaise, sour cream, ranch seasoning mix, chopped bacon, diced jalapeño peppers (remove seeds for less heat), and lemon juice. Stir until well mixed.

Cover the dressing and refrigerate for at least 30 minutes to allow flavors to meld.
