Method
Prepare the Calamari

Clean and Slice the Calamari
Rinse the calamari under cold water, then slice them into strips if not already pre-cut.

Prepare the Breading
In a bowl, mix flour, cornstarch, salt, and black pepper. In another bowl, whisk together eggs and ice water.

Batter the Calamari
Dip the calamari strips into the egg mixture, then coat them in the flour mixture.
Fry the Calamari

Heat the Oil
In a deep pot, heat vegetable oil to 350°F (175°C).

Fry the Calamari
Fry the battered calamari in batches until golden brown and crispy, about 2-3 minutes per batch. Drain on paper towels.
Prepare Tempura Toppings

Prepare the Toppings
Dip Thai basil leaves and sliced jalapeños in tempura batter mix, then fry them in the same oil until crispy. Drain on paper towels.
Make Spicy Mayo

Mix the Sauce
In a small bowl, combine mayonnaise, Sriracha sauce, and lime juice. Stir well to combine.
