Wings and Toppings
Method
Preparation & Cooking
- 1
Prepare the Wings
In a large bowl, combine flour, cornstarch, baking powder, salt, pepper, garlic powder, and paprika. Toss the chicken wings in the mixture until evenly coated.
- 2
Fry the Wings
Heat oil in a deep fryer or large pot to 350°F (175°C). Fry the wings in batches for about 10-12 minutes or until golden brown and crispy. Remove and drain on paper towels.
- 3
Fry the Thai Basil
In the same oil, quickly fry the Thai basil leaves for about 30 seconds until crispy. Be cautious as they may splatter.
- 4
Prepare the Jalapeños
Slice the jalapeños into rings. You can remove the seeds for less heat, if desired.
- 5
Assemble the Dish
Top the crispy wings with the fried Thai basil and jalapeño slices. Serve immediately.
